Abstract
La presente investigación se llevó a cabo, para evaluar la comparación de la concentración de cadmio y mercurio en conservas de pescado enlatadas y envasadas en vidrio expendidas en Lima. La cantidad de metales pesados, se determinó por el Método de Espectrofotometría de Absorción Atómica de Horno de Grafito y Generador de Hidruros. Los niveles de cadmio encontrados en las conservas de pescado, presentan un promedio de 0,068 ppm, con un valor mínimo de 0,03 ppm y un valor máximo de 0,13 ppm y los niveles de mercurio encontrados, presentan un promedio de 0,2306 ppm con un valor mínimo de 0,13 ppm y valor máximo de 0,39 ppm. Los resultados de la investigación, indican que las muestras de conservas de pescado superan los parámetros establecidos de cadmio y no de mercurio en el Servicio Nacional de Sanidad Pesquera, lo cual nos permite concluir que existe contenido metálico en las conservas de pescado, repercutiendo en la salud del consumidor
