Abstract
La investigación tuvo como objetivo determinar la presencia de aflatoxinas en arroz, maíz y trigo para consumo humano que se comercializan a granel en los mercados Micaela Bastidas y San Francisco del distrito de Villa María del Triunfo, así mismo, relacionar la actividad de agua de los granos con la presencia de aflatoxina en los cereales estudiados. Para efectos de esta investigación los análisis físicos de cereales se realizaron en el laboratorio de especialidad de la Facultad de Ciencias Farmacéuticas y Bioquímica de la Universidad Inca Garcilaso de la Vega
The objective of the research was to determine the presence of aflatoxins in rice, corn and wheat for human consumption that was marketed in the Micaela Bastidas and San Francisco markets of the Villa María del Triunfo district, as well as to relate the water activity of the grains with presence of aflatoxin in the cereals studied. For the purposes of this investigation, the hereditary analysis was carried out in the specialty laboratory of the Faculty of Pharmaceutical and Biochemical Sciences of the Inca Garcilaso de la Vega University
